As far as I know (not from my personal experience though), GTHost instant servers should be fine for that kind of workload. They’re generally known for fast deployment and decent network performance, but exact disk I/O and throughput can vary a bit by location and node.
For streaming benchmarks I’d probably just spin one up and test it for a day or two to see if the node sustains the disk and network performance you need.
