Thanks for your post and it is really the debatable. I would suggest you to read the four pages linked from here, especially what Versions are fully supported and expected to be bug-free: https://docs.cpanel.net/installation...-requirements/
One for each supported Operating System: AlmaLinux, CloudLinux, Rocky Linux and Ubuntu.
My recommendation is to choose either Ubuntu 20.04 or Alma Linux 8.x.
